Soft baked Chewy Peanut Butter Dark Chocolate Cookies Recipe

Ever since I discovered soft baked cookies, I never looked back. I remember trying them when I was younger and was bemused by their texture. My mother used to say that those were "lau-hong" biscuits aka crispy biscuits left out for too long that they lose their bite.


No mother, these are not spoilt - they are made intentionally.


I have a soft spot for peanut butter and dark chocolate. It is amazing how well this pairing complements each other.

This recipe has a small batch size and for a good reason - these cookies are highly addictive. Besides they are indulgent - one or two or three will hit the spot. 

Don't worry, the calories are well-justified.


(makes 8-10 cookies)

Ingredients
1 egg
70g sugar
80g peanut butter
25g butter
130g plain flour
1/2 tsp baking powder
60g dark chocolate
Pinch of salt

Method
1. Cream egg, sugar, peanut butter, salt together for about 5 minutes or till batter thickens

2. Sieve in flour and baking powder. Mix till no flour traces remain

3. Add in dark chocolate and divide cookie batter on lined baking tray

4. Freeze in freezer for 1h or chill in the fridge for 2h before baking. This step is important because you want the cookies to puff up when baking and not become flat and crispy
