Banana Walnut Butter Cake Recipe

There are some pairings which can't go wrong - apple and cinnamon, chocolate and nuts, etc. Banana and walnut is one such combination. This cake is errs on the light side, drier compared to the typical moist banana cakes. It is also very easy to make - you need two big bowls, one for dry ingredients and one for wet. Mix both together and you are ready to bake.



(makes 8 inch cake)

Ingredients
110g walnuts
230g plain flour
150g castor sugar
1 tsp baking powder
0.25 tsp baking soda
0.25 tsp salt
1 tsp ground cinnamon
2 large eggs
110g unsalted butter
450g unpeeled ripe bananas (I used 4 small bananas)
1.5 tsp homemade vanilla extract

Method
1. Toast walnuts at 180 degrees for 5 minutes. Leave to cool.

2. [Dry ingredients bowl] In a big bowl, sieve in flour, baking powder, baking soda, salt, cinnamon. Add in sugar and cooled walnuts.

3.[Wet ingredients bowl]  Melt butter in microwave and leave to cool. Add in egg and vanilla extract. Mix well.

4. Add wet ingredients to dry ingredients and mix well. Pour into lined cake mould and bake in preheated oven for 35-40 minutes at 180 degrees. Cake is ready when a toothpick inserted comes out clean.

Tips
It is best to use over-ripe bananas for the best flavour

Instead of using walnuts, you can use other nuts like almond, or pecans.
